Spinach
Remove the stalks and any damaged leaves, and wash very thoroughly in several changes of water, to remove grit or mud.
Put into a pan, add a little salt and place over a very gentle heat.
When the juice begins to run from the spinach, raise the heat and boil gently for about 15 minutes.
Drain thoroughly, and chop or sieve as required.
Add a small knob of butter or margarine and some pepper before serving.
