Baked Orange Parsnips

Parsnips are a delicious vegetables, especially when baked rather than boiled and adding orange to them really enhances their flavour. This recipes serves 4 and has 80 calories per portion.

Ingredients

16oz (450g) parsnips

Juice of one large orange
2-3 tbs water
2 tsp oil

Method

1. Preheat the oven to 200 deg C (400 deg F), lightly oil an ovenproof dish.

2. Thinly peel the parsnips and then slice lengthways (not too thinly) and then place in the prepared dish.

3. Mix the juice, water and oil together and pour over the parsnips.

4. Put them in the oven and cook for about 45 minutes or until soft. If they begin to dry out during cooking, add more water and orange juice.
