Spanish Baked Onion Tapas
This is a fabulous spicy recipe which can be served as a side dish or as the main part of a meal accompanied by seasonal vegetables.
Ingredients
2 dozen or so small boiling onions, peeled and blanched
1/4 cup olive oil
1/4 cup inexpensive cream sherry
2 tablespoons sweet and hot brown mustard
4 to 6 cloves of minced garlic
1 tablespoon chili powder
salt and fresh ground black pepper to taste, heavy on the pepper
dry chili flakes to taste
Parmesan cheese
Method
Drain the blanched onions well.
Mix the remaning ingredients except Parmesan cheese together and add the onions.
Mix well until completely covered.
Put Parmesan in a small dish and roll the coated onons in it.
Put onions in a baking dish and put in oven at 350` until they are nicely browned.
Remove from oven and sprinkle with finely minced parsley or cilantro or a combination, and some more Parmesan.
Serve hot or cold.
