Mushroom Loaf
Slices of this loaf can be used in place of the meat portion of any meal
Serves 6
Ingredients
1lb mushrooms
1 onion
1tbsp sunflower oil
2 tbsps skimmed milk powder
4oz grated nuts (or use ground almonds for speed)
8oz soft wholewheat breadcrumbs
1 tsp marmite (optional)
1 tsp dried mixed herbs
1 egg
salt and pepper to taste
Dried breadcrumbs for coating
Method
Pre-heat oven to 350f, 180c gas mark 4
Wash and then chop mushrooms roughly
Fry onions for about five minutes in oil until just tender and add mushrooms.
Fry both together for another few minutes until mushrooms are soft
Remove from heat and liquidize
Add all the remaining ingredients, mix well and season to taste
grease a 1lb loaf tin with butter or margarine and coat well with breadcrumbs
Spoon in the mushroom mix and smooth the top
Bake uncovered for one hour
Slip a knife around the sides and turn out loaf
Serve sliced with a savoury sauce and vegetables.
It can also be used cold as a sandwich filling
