German Red Cabbage with Apples
For a stunningly colourful dish which can be used as an accompaniment to almost any hot veggie meal, you can't go wrong with German red cabbage with apples.
Ingredients
1 small red cabbage, coarsely chopped
1 thinly sliced medium onion
4 firm, tart apples , peeled, cored and thinly sliced
¼ cup firmly packed brown sugar
1 tsp salt
½ cup dry red wine/red wine vinegar
2 tablespoons butter
Pepper to taste
Method
Combine all ingredients except butter and pepper in large, heavy pan.
Cook over medium heat until just tender - around 20 to 25 minutes.
Add butter and cook for 5 minutes.
Season to taste with pepper.
