Cabbage - white and green
White cabbage
Wash well and remove very coarse outer leaves.
Cut in half and take out the hard stalk.
Shred.
Cook in a little boiling water till tender — about 10 minutes — and drain well.
Green cabbage
Dark green, curly leaved cabbages should just have the leaves shredded by hand and dropped into the boiling water.
Cook for 5 mins.
