Tahini
This simple to make dip is absolutely delicious and if used as a spread forms the basis for scrummy sandwiches as well.
Ingredients
225g (8oz) toasted sesame seeds
1/2 cup oil (preferably olive)
2 cloves garlic
1 tsp sea salt
Juice of 2 lemons
1/2 tsp coriander seeds
1 cup water
Method
Place all ingredients in a blender or food processor except the water which should be added gradually while blending until a creamy consistency has been reached.
Tahini can be varied by using different spices such as cumin, paprika or parsley.
Serve as a dip with breadsticks, raw vegetable sticks or wholewhat toast.
