Snack bars

These snack bars are suitable for diabetics, but everyone will love them

Ingredients

1-1/3 cups flour (wholewheat if liked)


1 cup quick oats
1/2 cup Splenda
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 cup nonfat milk
1/2 cup applesauce
1 egg
1 egg white
1/2 cup raisins
1 cup mashed bananas
1 tsp. vanilla

Method

Stir together flour, oats, Splenda, baking powder, baking soda, cinnamon and nutmeg.

Add remaining ingredients and mix until smooth.

Spread batter evenly in a non-stick 9x13-inch baking tray or use an ordinary spray pan with cooking spray.

Bake at 350*f, 170*c, gas mark 4, until bars are golden brown and just beginning to pull away from pan sides, about 35-40 minutes.

Serve warm or cool, cut into 2 inch squares.

To store---wrap each bar tightly with plastic wrap and keep frozen for use as needed.
