Grilled Cheese and Roasted Red Pepper Sandwiches
There's nothing as satisfying as a fried cheese sandwich - except this one which has extra oomph with the addition of peppers.
Ingredients
4 slices multi-grain bread
4 slices cheese of your choice - I like cheddar
2 roasted red bell peppers (from 7.25-oz jar) drained, cut into 1-inch strips (or fry your own)
1 tablespoon margarine or butter, softened
Method
Top 2 bread slices with sliced cheese, half of bell pepper strips and another layer of sliced cheese.
Top with remaining bread slices.
Spread margarine on both sides of sandwiches.
Heat large skillet, griddle or frying pan over medium heat until hot, or to 375 F.
Add sandwiches; cook 2 to 4 minutes on each side or until bread is golden brown and cheese is melted.
TIP: As the sandwich is sticky to hold when it's spread on both sides, I often assemble the sandwich right on the pan while the bottom half is cooking. It takes quick fingers, but saves some of the messiness.
