Sandwiches and snacks
Snacks and sandwiches (or sarnies as we Brits call them!) can be just as exciting for a vegetarian as for everyone else - you just need to get your mind into a new way of thinking.
Use wholemeal bread and rolls, pitta pockets, wraps and tacos for plenty of variety.
Fillings can include chopped mixed salad, including beansprouts, soft and hard cheeses, egg, peanut and other nut butters, yeast extract, bean patés or even cold sliced nut and bean loaves. Those of you who are new to a veggie diet may like to use the quorn meat-style slices which come in ham, chicken and beef varieties. Treat these just as you would meat and add the extras of your choice (mustard etc) to your sandwich.
I've found a selection of unusual sandwich fillings as well as old standbys which are sure to tempt your tastebuds. I've also included some savoury snacks which in most cases are quick to cook, or if not, are at least simple to make.
