Low fat veggie cottage pie

Meat substitutes are always lower in fat than their real alternatives so any meal in which you substitute quorn or soya mince for real meat will always be lower in calories.

305 calories per serving

Ingredients

300g Vegetarian Mince, (Realeat) 
3 med carrots 
1 med onions
1 tbsp Sunflower Oil
2 Servings/56g Gravy Granules, (Bisto Vegetarian)
200g Potatoes
25g Margarine, (Light, Flora)
30ml Milk, Semi Skimmed
1tsp Garlic minced
2 tsp Black ground pepper

Method

Peel potatoes and bring to boil in a pan of water.

Peel and dice carrots and onions into small pieces, heat oil in a pan and sauté gently for a few minutes.

Drain oil from pan and add veggiemince and water (as directed on packet) and place back on heat.

Stir in a little garlic, and a pinch of pepper and let simmer.

Turn on oven to 190°C 

Add 2 Tbsp. vegetarian gravy granules to mince and stir continuously for a few minutes while it thickens.

Drain potatoes, add margarine and splash of milk and mash until very smooth and creamy.

Using an oven proof dish, empty mince into bottom and tap dish on side a few tomes to settle mixture.

Very gently, and not in large lumps as they will sink, using a spoon and fork spread your very creamy mash completely over surface.

Put pie into oven until the mash starts to just brown on top. For variety (and sheer yumminess) I top with grated low fat cheese but if you are on a strict diet perhaps you shouldn't!!
