Bean Goulash
Bean Goulash can be as hot and spicy as you like by using more or less chilli than stated in the recipe. Kidney beans are a good source of protein and fibre for a vegetarian diet and this is a good tasty way to cook them. This serves 4 and there are approx 205 calories per portion.Ingredients
6oz (175g) kidney beans, soaked and ready to use1 finely chopped onion
1 small finely chopped red chilli
3 large chopped red bell peppers
8oz (225g) chopped mushrooms
1 medium diced potato
1 tbs oil
1 clove garlic
3 tsp paprika
1 tsp dried thyme or 2 or 3 sprigs of fresh chopped thyme
2 tbs tomato pureé
Salt and pepper to taste
Method
1. Cook the kidney beans by bringing to the boil in fresh water (not the water you soaked them in), then simmering for about 40 minutes or until soft. Drain and keep the water.2. Heat the oil in a large pan and fry the onion until blond and soft then add the garlic, chilli, mushrooms and bell peppers. Stir well over a medium heat for about 5 minutes then cover and cook for a further 15 minutes on a lower heat.
3. Remove from the heat and add the kidney beans, potato, paprika, tomato pureé, thyme and salt and pepper. Now it needs to be simmered for about 30 minutes. Add some of the water reserved from cooking the beans if it needs it.
4. Serve hot with rice or noodles.
