Blue Cheese Loaf

Ingredients:

100g/4oz self raising wholemeal flour


100g/4oz self raising flour
1/2 teaspoon baking powder
1 teaspoon mustard powder
1/2 teaspoon salt
50g/2oz butter
100g/4oz Danish Blue cheese
2 celery sticks, finely chopped
50g/2oz walnuts, chopped
1 large egg
120ml/4fl oz milk
sesame seeds or poppy seeds

Method:

Sift all the flour, baking powder, mustard powder and salt into a mixing bowl, adding any sieved bran from the sieve.  Rub in the butter until the mixture resembles fine breadcumbs.

Crumble the cheese and rub it into the dry mix.  Mix in the celery and walmuts.  Beat the egg and milk together and add to the dry mix and mix to create a fairly stiff consistency.

Spoon the mixture into a lined and greased 450g/1lb loaf tin.  Level the top and sprinkle with choice of seeds if desired.  Bake in a moderately hot oven for 1 hour or until well browned.  A skewer test will produce a clean skewer from the centre when the loaf is cooked.
Allow the loaf to cool for 5 minutes in the tin then turn out onto a wire rack.  Remove the lining paper and allow to cool further. 

Serve warm or cold - try slicing the loaf and spread with butter or your choice of spread.
