Mushroom and Leicester salad
Serves four
Ingredients
8 oz. very fresh button mushrooms5 tbsp. salad oil
Salt and freshly ground black pepper
4 oz. red Leicester cheese
1 tbsp. wine vinegar
1 tbsp. chopped parsley
2 tsp. chopped chives
Method
Trim and carefully wipe the mushrooms.
Slice thinly and place in a bowl.
Add enough oil to coat the mushrooms; season with salt and pepper.
Cut Leicester cheese into cubes and add to the mushrooms with the vinegar and herbs.
Toss together, put in a salad bowl and cover and chill briefly before serving.
