Crunchy tofu

Ingredients

1lb tofu
4 tbsp plain flour


Grated nutmeg
Salt and pepper
1 beaten egg
4oz of dry white breadcrumbs.
Oil for deep frying

For the sauce
1 large clove garlic, crushed
2 tbsp tomato puree.
4 tbsp. chopped herbs
1/4/pt double cream lightly whipped

Method

Cut tofu into slices.

Mix flour. nutmeg and seasoning together.

Dip the tofu in the seasoned flour, beaten egg and breadcrumbs.

Chill.

Mix the ingredients for the sauce and chill until required.

Heat the oil for deep frying to 290°C/375°F.

Fry the tofu until crisp and golden, then drain on kitchen paper.

Garnish and serve piping hot with the chilled sauce.
