Pasta Mix

I have no idea what to call this as it's something I whip up once a fortnight depending on what I've got in my cupboard! Feel free to adapt it as much as you like.

Serves 4

Ingredients

Dried pasta of any variety
Jar of pasta sauce of your choice (my favourite is creamy tomato and cheese)

Frozen mixed vegetables
Quorn chunks
Cheddar cheese (or any tasty cheese of your choice)
Parmesan for serving

Method

Place two pans of water on to boil.

In the larger pan add enough pasta for four people. Depending how big your hands are, I'd suggest two handfulls for each person, but you can use up cold cooked pasta in other meals so cook more than you think you'll need!

In the smaller pan add enough frozen veggies for four small portions

When the pasta and veggies are cooked, drain them both and mix together in the larger saucepan.

Empty a 15oz (ish) jar of pasta sauce into the ingredients and fill the jar a third full with milk. Put the top back on and shake it to get up every bit of the sauce, and add to the pan.

Add half a packet of frozen quorn chunks (or soya chicken style chunks) to the pan. and put back onto the heat.

When warmed right through, stir in some grated cheese.

Serve in warmed bowls, either on its own or with garlic bread, or a slice of crusty white bread.

Sprinkle with parmesan if liked.
