Chickpea burgers
I love burgers and miss fast food. This makes a satisfying alternative - especially when served with fries!
Serves 4 (one burger each!)
Ingredients
Olive oil for frying
1½ cups onions, very finely chopped
3 cloves garlic, crushed
1 tsp ground cumin
1 cup carrots, finely chopped
1¾ cups cooked and drained chickpeas
1½ tbsp tahini or peanut butter
¼ cup parsley, finely chopped
1/3 cup chick pea or white flour
½ tsp baking soda
1 tsp salt
juice from ½ lemon
Method
Heat a little oil in a pan and fry the onions gently for about 5 mins stirring all the time so they don't brown.
Add the garlic, cumin, and carrot and stir for two more minutes.
Place in a large bowl or food processor and add the chickpeas.
Mash or process until mushy.
Stir in tahini (or peanut butter) and parsley.
Mix the flour, baking soda, and salt in a small bowl and stir into chickpea mixture.
Rub flour onto your hands, then shape the mixture into four patties.
Fry them in a splash of oil over a medium-low heat on both sides until they just begin to brown. They cook quickly so check after a minute or two.
Serve with salad or even in a sesame bun!
