Blue cheese and mandarin salad

Serves 6

Ingredients

1 (10 1/2 oz) can mandarin segments
3 oz. blue cheese
1/4 pint soured cream or mayonnaise


Salt and freshly ground black pepper
1lb of white cabbage, finely shredded
Lettuce to serve

Method

Drain the mandarins.

Crumble blue cheese into the mandarin juice, then mix in the soured cream or mayonnaise.

Season well before tossing with the cabbage and mandarins.

Serve on a bed of lettuce
