Tofu cakes
I have to admit that tofu is not my favourite food, however it is extremely good for me so I do try and eat it as often as I can bear to and this is as nice as it gets. Why can't American Airlines cook it into something vaguely tasty like this as well?!
Ingredients
12 oz. of tofu
6 spring onions, chopped
2 tbsp chopped parsley
3 tbsp finely chopped walnuts
4 oz fine whole wheat breadcrumbs
2 tbsp grated Parmesan cheese
Salt and pepper
Oil for shallow frying
Method
Mix the tofu with the spring onions, parsley, nuts, breadcrumbs and parmesan.
Then knead by hand to bind together and season to taste.
Shape the mixture into eight round cakes.
Heat the oil for shallow frying and fry the cakes in batches until light golden brown, turning once.
Drain on kitchen paper and keep hot while frying the remainder.
Serve with a crisp salad.
