Refried Beans
Refried beans aren't really fried twice, they are fried just once. Most recipes use bacon fat or lard for frying, obviously not something a vegetarian would consider so, instead, vegetable oil is used instead. This is another recipe where you can adapt the recipe to suit your own taste quite easily by changing or adding flavorings.Print this recipe
Ingredients
2 cups (16oz, 450g) pinto beansWater
2 tbs olive or sunflower oil
1 or 2 onions according to taste, finely chopped
2 or 3 cloves garlic, finely chopped
Salt and black pepper to taste
Method
1. Soak the beans for at least 4 hours, but preferably overnight. Save the water for adding to the beans later.2. Put the beans in a large saucepan and cover with water. Make sure they have at least 3 or 4 inches of water above the level of the beans. Simmer until the beans are soft and top up with water if necessary. This can take a couple of hours, maybe a longer. An alternative is cook them in a pressure cooker which will cook them much more quickly - consult the instructions for your pressure cooker.
3. When the beans are soft, drain off the water but keep it in reserve.
4. Heat the oil in a strong pan or wok and then cook the onion until soft and blond. Add the garlic, stir in well and cook for a few minutes.
5. Add the beans and some about 1/2 cup of water the beans were soaked in. Continue to cook while mashing the beans into the water, add more if necessary because it shouldn't be too dry. Season with the salt and pepper.
