Crunchy cabbage salad
Serves four
Ingredients
8 oz. red cabbage finely shredded
4 oz. white cabbage finely shredded
One red pepper, deseeded and chopped
2 oz. sunflower seeds
4 oz. salted peanuts
2 oz. raisins
For the dressing
1 tbsp. wine vinegar
1 tsp. mustard
2 tbsp. natural yoghurt
2 tbsp. groundnut oil
1 tbsp. chopped parsley
Salt and pepper
Method
Place the red and white cabbage in a salad bowl with the pepper, sunflower seeds, peanuts and raisins.
Mix well.
Place all the dressing ingredients in a small bowl and whisk with a fork until thickened.
Pour over the salad and mix thoroughly.
Serve immediately or cover and refrigerate until ready to serve.
