Baked Stuffed Onions
These savoury stuffed onions are a hit with everyone including meat eaters and are great for using up old onions that we often have knocking around in the veg tray!
Ingredients
2 Even-sized onions
3-4 oz. grated cheese
2 tbsps. breadcrumbs
A little white sauce
Salt and pepper
Method
Peel and boil the onions for about 20-30 minutes. (To avoid handling them, use a fork when peeling. It's handy to keep a chopping board for onions and garlic only.)
Drain, and scoop out the insides with a spoon or pointed knife.
Mix the crumbs, seasoning and most of the cheese, add a little sauce to moisten and fill onions.
Put in a fireproof dish and sprinkle with remaining cheese.
Bake in a moderately hot oven (425 ° F.) until the onions are quite tender when pierced — 30-45 minutes.
As an alternative other fillings can be used instead of the breadcrumbs: savoury veggie mince or sausage mix (moistened first with a little vegetable stock), rice and vegetable mix or even mushrooms and cheese. Make up your own with any bits and pieces you have lying around in the fridge or store cupboard.
