Spanish omelette

I've seen many recipes for Spanish omelettes and they all seem different. This is what I've always called a Spanish omelette so please don't email me to say I've got it wrong. We'll call it Sue's Spanish Omelette instead okay?

It's easy and quite enough for a main meal on its own and you can use whatever ingredients you prefer - experiment!

Ingredients (per person)

Two eggs
Tomato - chopped
Small onion - chopped
Small handful of sliced mushrooms
Grated cheese
Knob of butter/marge for frying

Method

Fry the vegetables in the butter until soft

Beat the egg and stir in the grated cheese.

Pour the egg and cheese mixture over the fried vegetables so it covers the whole of the base of the frying pan

Turn the heat down and cook slowly until when you gently shake the pan, the top just quivers.

If you're brave, flip the omelette. If you're a wimp like me, place it under a hot grill to cook the top instead.

Serve with anything you like from chips/fries to a slice of fresh bread.
