Palak ki dal - (lentils with spinach and garlic)
The grainy lentils blend beautifully with the creamy spinach in this lovely Indian dish.Ingredients (serves 4)
5 oz (500g) split red lentils, washed and
drained
5oz (500g) spinach, washed thoroughly and
cut into strips
2 tbsps sunflower oil
2 garlic cloves, peeled and lightly crushed
1 tsp turmeric
1 tsp chilli powder
2 tsps lemon juice
Method
Cover the lentils with about 11 floz (300ml)
of hot water and bring to the boil.
Reduce the heat and simmer until mushy, adding
more water if needed.
Boil a little water in another pan and sweat
the spinach,uncovered for a few minutes.
In a wok or pan, heat the oil and fry the
garlic.
Sprinkle on the spicepowders and pour on
the cooked lentils and spinach along with
it's cooking water.
Mix well.
Add the lemon juice and season with salt.
Heat through and serve hot.
