Dairy substitutes

Giving up dairy products is usually the final part of embracing a fully vegan diet. Dairy foods are the mainstay of so many regular meals that it can be off putting to think of ways of doing without them.

Now you don't have to as I've compiled a list of alternative foods that you can use instead of dairy products.

Instead of...

Butter

For baking use vegetable oil or margarine.
For spreading use margarine - the new spreads based on olive oil are particularly good for you
For frying use vegetable oil or simply use a little water, with perhaps some wine added for extra zing! There a re many wonderfully flavoured oils you can experiment with for frying - my favourite is sesame oil which has a lovely nutty flavour. Check out the supermarket shelves for lots of others.

Milk

For baking and drinking use soya milk. There are low fat varieties and sweetened varieties depending on what you are going to use it for.
For drinking use soya milk and try some of the delcious chocolatey flavoured ones. Added to tea and coffee, soya milk tastes a little like skimmed 'normal' milk but is quite drinkable.

Eggs

For baking try health food shops which have a variety of egg substitutes, none of which are truly successful in baking cakes or scones etc but will do.
For replacing scrambled egg, try scrambling tofu with tomatoes, onions etc in a frying pan.
If you are vegan for animal welfare reasons you could buy eggs direct from a local free range farm or smallholding or even keep chickens or ducks yourself!

Cheese

For baking and eating, vegan cheeses, whilst more expensive than regular cheese, can be bought from most supermarkets, or failing that, from health food shops. The taste is similar to 'normal' cheese but it tends not to react the same when grilling as it doesn't have the same 'melt' feature. This is good though as it means it isn't filled with fat!
