Citrus watercress salad
This is a lovely tangy salad - very different from any you've tasted before. Give it a try.
Ingredients
225g (8oz) cooked brown rice
2 oranges
1 grapefruit
1/2 tsp grated nutmeg
25g (1oz) chopped almonds
4 bunches watercress
Method
Chop the citrus fruits into small pieces.
Mix the rice, almonds and spices together.
Carefully mix in the fruit trying not to break it.
Serve on a bed of watercress
