Vegetarian Gravy

Gravy is something that new vegetarians miss but you can still have it. Even though this recipe doesn't use meat juices, it is still a tasty alternative to traditional gravy recipes - in fact many people prefer it.

Ingredients

2 cups (500ml, 20 fl oz) vegetable stock
1 cup  (150g, 6oz)  ground nuts
1 medium chopped onion
3 tbs all purpose (plain) flour
2 tbs oil or butter
1 tbs sage or other herb of your choice
Salt and pepper to taste

Method

1. Heat the oil in a pan and cook the onions until soft.

2. Stir in the flour, ideally use a wooden spoon, and cook for one minute.

3. Gradually stir in the vegetable stock, stirring well between each addition of stock. The slower you do this, the thicker the gravy. If you add too much liquid in one go, the gravy could go lumpy.

4. Stir in the nuts and sage. Simmer for 5 to 10 minutes.
