Tabouleh

Tabouleh (or Tabouli) is a Lebanese salad which goes well with hummus and you can experiment with other ingredients, for example, more or less garlic, mint or onions.

Ingredients

1 cup bulgar wheat
1½ cups boiling water
¼ cup lemon juice
¼ cup olive oil
2 cloves garlic, finely chopped
4 scallions (spring onions), finely chopped
1 medium cucumber, peeled, deseeded and diced
1 cup fresh parsley, finely chopped
2/3 cup fresh mint, finely chopped (alternatively, use just 2 tbs dried mint)
2 tomatoes, chopped
Salt and black pepper to taste

Method

1. Put the bulgar wheat into a bowl and pour the boiling water over it. Leave it to soak for about 30 minutes. The water should cover the bulgar all the way through the soaking time so top up if necessary. You'll know when it's ready because it will be soft.

2. Drain off any excess water. Add all the remaining ingredients except the cucumber and tomatoes, and stir well.

3. Refrigerate for about an hour then stir in the cucumber and tomatoes.
