Quorn with apple and cranberries
This is one of my favourite meals. It can be prepared very quickly and tastes absolutely scrumptious.Ingredients (serves 2)
4 quorn cutletssalt and pepper to taste
1/2 tbsp olive oil
1/2/ tbsp butter
1 clove garlic, pressed
2 green (spring) onions, chopped
1/2 cup cored, peeped and diced green apple
1/4 cup chopped cranberries
1/4 cup orange juice
Method
Melt oil and butter in a frying pan over a medium heat.
Add garlic and green onions and stir fry for about 2 minutes.
Add remaining ingredients and bring to a boil.
Reduce the heat and simmer, covered until the apples are softened.
Remove the cutlets from the sauce and place on a plate, then pour the remaining sauce evenly over the top.
Serve with potatoes and steamed green beans.
