Mediterranean couscous

Couscous is a great replacement for rice in meals and is particularly good with salads. This variation is practically a meal in itself.

Ingredients (serves 4)

12 oz (350 g) couscous
6 floz (175ml) orange juice
6 floz (175ml)hot vegetable stock
3 1/2 oz (100g) sun-dried tomatoes
10 ready to eat apricots,chopped
Handfulof chopped parsley or basil
2 tbsps pitted black olives
3oz (75g) pinenuts, toasted
5 tbsps olive oil
Juice of one lemon
5 oz (150g) feta cheese, crumbled

Method

Put couscous in a large bowl.

Mix together stock and orange juice and pour over the couscous.

Leave until the liquid has been completely absorbed which should take about 25 mins.

Stir the couscous with a fork to get rid of all the lumps.

Stir in the rest of the ingredients and serve garnished with extra olives.
