Gypsy Potatoes
Serves 4-5
Ingredients:
4oz butter
1 1/2 lb old or new potatoes
seasoning
1 lb tomatoes
1 medium onion, peeled and chopped
2 oz soft breadcrumbs
Method:
Melt the butter in a large saucepan. Peel or scrape the potatoes, cut into slices approx. 1/8 inch thick. Toss the potato slices in the butter until each slice is coated then season to taste. Place the tomatoes into boiling water for about 30 seconds and then plunge into cold water so that the skins are easily removed. Add the grated onion to the tomatoes, season and mix well. Arrange alternating layers of potato and the tomato mix in an oven proof dish, ending with a layer of potatoes. Sprinkle with breadcrumbs and pour any melted butter from the pan over the top. Bake in a moderately hot oven (400f) until the potatoes are tender and the top is crisp and golden brown.
TIP: Serve with your choice of vegetable dish. As an alternative, add grated cheese to the tomato and onion mix.
