Gulabi Lassi (Rose lassi)

Lassi is an Indian dish. It's a slightly thinned down version of yogurt, seasoned with spices and salt or deliciously flavoured with fruit or flowers as in this recipe.

Ingredients (per serving)

600ml (1 1/4pt) natural yoghourt
4 tsp sugar
2 tsp rose essence
Pink food colouring
Pink rose petals to garnish (optional)

Method

Mix together yoghourt, 300ml (11 fl oz) water, sugar,roseessence and colouring in a blender

Chill in the fridge.

Pour into individual serving glasses and top each with a coupleof rose petals
