Fresh mint and lemonade

A lovely refreshing drink for a Summer's day. Home made is always best!

Ingredients

A large handful of fresh mint
200g (70z) caster sugar
200ml (7 floz) boiling water
Juice of 4 lemons
1 1/2pts sparkling spring water (such as Perrier)
Extra int leaves,lemon slices and ice cubes

Method

Put mint and sugar in a heat proof jug and pour boiling water over.

Stir to dissolve sugar and leave to cool, before straining.

Discard the mint leaves and add the lemon juice.

Make up to two pints with sparkling water.

Add fresh mint, lemon slices and lots of ice.

Serve from a large clear jug.
