Curried rice and cheese fritters
The addition of curry to these fritters makes a tasty change.
Ingredients
450g (1lb) cooked brown rice
125g (40z) grated hard cheese
2 tsp curry powder
2 eggs, beaten
Salt and pepper for seasoning
50g (2oz) soft wholewheat breadcrumbs for coating
Oil for shallow frying
Method
Mix together cooked rice, cheese, curry powder and half the beaten egg.
Season with salt and pepper.
From into croquettes.
Dip each into the rest of the beaten egg and coat with breadcrumbs.
Fry on both sides in hot oil (as little as possible).
Drain and serve with a crisp salad and natural yoghourt or yoghourt mayonnaise dressing.
Alternatively serve with a curry or tomato sauce and cooked vegetables.
