Cheddar Meringue Pie
Serves 4
Ingredients:
For the flan base-
6oz plain flour

pinch salt
1 1/2 oz margarine
1 1/2 oz cooking fat
2 tablespoons cold water
For the filling-
1oz butter
1oz plain flour
1/2 pint of milk
6oz grated Cheddar cheese
2 egg yolks
seasoning and a little cayenne
For the topping-
2 egg whites
pinch salt
2oz grated Cheddar cheese
Method:
Sieve the flour and salt. Rub in fats until mixture resembles fine bread crumbs, then mix to a stiff dough with the cold water. Turn onto a floured board, knead lightly until smooth and roll thinly. Line a 7-8 inch flan ring with the dough and bake in a hot oven for 20-25 minutes.
Meanwhile, prepare the cheese sauce filling by heating the butter in a pan. Remove from the heat and stir in the flour. Cook for 2-3 minutes, stirring well, until dry. Remove from the heat and gradually blend in the milk. Bring to the boil stirring constantly. Add grated cheese to the very hot sauce. Cook gently for 1-2 minutes to melt the cheese into the sauce. Add the egg yolks, seasoning and cayenne.
Pour the cheese sauce mixture into the prepared flan case.
To make the topping - Whisk the egg whites and salt until stiff and fold in the grated cheese. Pile the topping onto the cheese sauce mix and bake in a very moderate oven (325-350f) until golden brown.
TIP: To serve cold, 'set' the meringe filling for 1-1 1/4 hours in a very cool oven (275f).
