Carrot and coriander soup
This is very quick to make and tastes much better than the shop bought versions. Go on give it a try!
Ingredients
1oz butter
1 1/2 lb sliced carrots
2 chopped onions
1tsp ground coriander
2pts vegetable stock
Fresh coriander for garnishing
Method
Melt the butter in a large saucepan.
Add the carrots, onions and coriander.
Pour on the hot stock and bring to the boil.
Simmer for about 40mins or until tender.
Cool slightly then whizz in a food processor. You'll need to do this in batches depending on the capacity of your processor.
Put the mix back into the pan and season to taste.
Sprinkle with freshly chopped coriander before serving.
NOTE: This soup freezes well
