Arugula toasts
Arugula (or rocket) is an acquired taste as it is very peppery. You either love it or hate it. If you are an arugula-lover then you'll thoroughly enjoy these little starters which are quick and easy to make.

Ingredients
Allow 2 slices per person, so multiply the following ingredients by the number of people to serve
2 thin slices from a small loaf of whole grain bread, or one slice halved of a normal size loaf
2 - 4 thin slices of feta cheese
2 - 4 arugula leaves
1 small tomato, sliced
olive oil
pepper
Method
Toast the bread lightly on both sides.
Arrange a single layer of feta cheese on each piece of toast.
Top with one or two arugula leaves, then a slice of tomato.
Drizzle with olive oil and grind a bit of pepper on top.
Serve immediately.
Use extra virgin olive oil for drizzling as this tastes the best.
