Vegetable Curry
Curry is now, apparently, the national dish of the UK because it's the most popular. When making it at home, it's quick and easy. This recipe uses garam masala, now quite easily available in supermarkets but, if you can't find it use curry powder instead. Putting garlic in curry gives it a depth of flavour without overpowering it.Print this recipe
Ingredients
3 cloves of garlic3 tbs oil
2 level tbs garam masala
juice of 1/2 lemon
1 chopped onion
4 peeled and chopped tomatoes (or use canned tomatoes)
8oz (225g) peeled potatoes cut into chunks
8oz (225g) chopped green beans
8oz (225g) peas
a little sugar
Method
1. Peel the garlic then crush it. Put it in a small bowl with the garam masala and lemon juice and mix them to a smooth paste.2. Heat the oil and then reduce the heat and put in the garlic paste and cook for 5 minutes, stirring constantly.
3. Now put in the onion and cook for a couple of minutes, stirring well, then add the tomatoes, 3 tbs water and a little sugar (about 1/4 tsp). Cook for 5 minutes.
4. The potatoes, beans and peas are added next, season with salt if required, add enough water to cover the mixture. Cover the pan and simmer for about 15 minutes or until the potatoes are cooked. Serve with rice.
