Tofu nuggets
These breaded tofu nuggets are great when eaten with a tasty dip and they are especially fun and easy for kids to make.
Serves 4
Ingredients
1 carton extra-firm tofu

¼ cup cornmeal
¼ cup wheat flour
¼ cup fine bread crumbs
salt
pepper
enough peanut or sesame oil for shallow frying
Method
Drain the tofu.
Cut into about 16 even chunks.
Mix cornmeal, flour, bread crumbs, salt, and pepper, sprinkle half of the mixture over a plate.
Shake excess water from tofu then coat with mixture on plate, turning plenty of times.
Sprinkle more of the dry mixture on top if you need to unitl you've used as much as is necessary to give them all a good coating.
When all of the tofu is breaded, heat the oil over medium heat.
Add a single layer of tofu pieces and fry until golden, about 5 minutes. Turn and cook the second side, then repeat with remaining tofu.
Serve hot with dips of your choice.
For variety you could marinate the tofu before breading and/or add herbs and spices to the dry mixture.
