Spicy tofu
Despite tofu being my least favourite food (!!) it can be made very tasty by the addition of lots of flavours before cooking.Ingredients (serves 4)
1 x 250g pkt smoked tofu
3 tbsps soy sauce
3 tbsps olive oil
1 bunch spring onions, trimmed and finely
sliced
1 red chilli, deseeded and sliced
2 x 400g cans green lentils, drained and
rinsed
Juice of 1 lime
Handfulof coriander, roughly chopped
Method
Marinate the tofu in 2 tbsps soy sauce for
30 mins (or overnight if possible).
Drain and keep the marinade to one side.
Heat the oil in a frying pan and add the
tofu.
Fry it until it's browned on all sides.
Add the spring onions and chilli and fry
for one more minute.
Pour in the lentils, lime juice, left over
marinade and soy sauce and heat right through.
Just before serving stir in the coriander.
