Hummus
Hummus (or hummous) is a delicious thick paste made from chick peas which can be spread on bread or used as a dipIngredients
250g/8oz chick peas, soaked overnight.
150ml/1/4 pint tahini
3 cloves garlic, roughly chopped.
juice of 1 to 2 lemons
salt and pepper
For the garnish
1 tablespoon olive oil blended with
1 teaspoon of paprika
1 teaspoon chopped parsley
Method
Drain the chick peas, place in a saucepan and cover with cold water.
Bring to the boil, cover and boil rapidly for 10 minutes, then simmer gently for 1 1/2 to 2 hours, until soft; the time will vary depending on the age and quantity of the peas.
Drain, reserving 300ml/1/2 pint of the liquid.
Place the chick peas in a liquidiser or food processor, add the remaining ingredients and season with salt and pepper to taste.
Add some of the reserved cooking liquid and blend to a soft creamy paste.
Turn into a shallow serving dish, drizzle over the blended oil and sprinkle with the parsley.
Serve with pitta bread.
