Blender mayonnaise

Here's a recipe for classic mayonnaise which can be made very quickly and easily using your blender.

Ingredients

1 egg


1.4.tsp salt
1/4 tsp dried mustard
Pinch black pepper
2 tsp white wine vinegar
2 tsp lemon juice
200ml (7 fl oz) olive oil or a mixture of olive oil and soya or sunflower oil

Method

Place the egg, salt, mustard, pepper and vinegar in the blender and mix for one minute on a medium speed.

Now add the oil drop by drop through the hole in the lid of the blender while still leavingit on a medium speed.

After about half of the oil has been added, the sound the mix makes will change to a sort of glug glug sound, at which time you can start adding the oil in a continuous stream.

If the mayonnaise is a bit too thick when all the oil has been added, you can thin it with a little milk or boiling water.
