Black Bean and Corn Salad
Ingredients
1 ½ c. cooked black beans, drained and rinsed
2 c. cooked corn kernels
1 red bell pepper, fresh or roasted, chopped
3 green onions (spring onions), sliced
2 T. minced fresh coriander (cilantro)
2 T. diced canned mild green chilies
1 T. olive oil
2 T. red wine vinegar
1 ½ T. lemon juice
¼ tsp. kosher salt
1/8 tsp. crushed red pepper flakes
½ tsp. ground coriander
½ tsp. ground cumin
Method
In a large bowl combine beans, corn, bell pepper, onions, coriander, and chilies. Whisk together remaining ingredients in a small bowl and stir the dressing into the salad.
