Hazelnut roast

I love nut roasts and this one is extra special as it's so quick and easy to make.

Ingredients

2 medium onions
2 eggs beaten
2oz margerine
4oz ground hazelnuts
2oz dried wholewheat breadcrumbs
1 tsp yeast extract
2 tsp mixed herbs
salt and pepper to taste

Method

Pre-heat oven to 350f, 180c gas mark 4

Peel and chop onions and sauté in marge for 10 - 15 minutes.

Add all ingredients and mix well.

Bake in a greased loaf tin for 30 - 40 mins.

Serve hot with vegetables or cold with a salad. Both are equally delicious.
