Vegetables Scampi-Style
This is a tasty, quick meal made with seasonal vegetables so it's also cheap!
Makes 4 servings
Ingredients
2 tablespoons olive oil

1 tablespoon garlic, minced
1 medium zucchini, sliced
1 medium yellow squash, sliced
2 cups broccoli florets
1/2 pound mushrooms, sliced
3 cups rice, cooked
1/2 cup butter, melted
salt and pepper to taste
Method
Heat the oil in a large frying pan or wok.
Add the garlic, squashes, broccoli and mushrooms.
Cook until just soft.
Add the butter and toss.
Check the seasonings.
Serve over warm rice as a side dish.
Note: You can use any seasonal vegetables for this dish and, if you are health conscious, choose brown rice although this is a bit drier than white rice when cooked.
