Chilli and tomato pasta
Ingredients
350g (11oz) dried spaghetti
4 tbsps good fruity olive oil
1 red chilli, deseeded and finely chopped
1 garlic clove peeled and crushed
8 ripe medium tomatoes, deseeded and chopped
handfulof parsley chopped
Method
Cook spaghetti according to packet instrcutions.
Pour half the olive oil into a pan, then
add the chilli and garlic.
Cook over a low heat for 5 mins, being careful
not to let the garlic brown.
Season well, ad the tomatoes, remaining oil
and parsley, then remove from the heat.
Drain the spaghetti, add the sauce and stir
before serving.
This dish can be enjoyed as it is or as basil
is a perfect partner for tomatoes, you can
make the dish more herby by adding a handfulof
chopped (or dried) basil just before serving.
You could also try adding a ball of mozarella
cheese torn into pieces just before serving.
